fun time. There is always 2011 to look for-
ward too.
This years theme was “Rockin the River.
A 9 mile River float down the Colorado.
Floaters left the Community Park and
Chamber of Commerce Beach.

book page. There you can preview a 21

FALL FESTMesquite, Nevada
Don’t miss another great event put on
by the Virgin River Hotel/Casino in Mes-
quite, Nevada. The Holiday season will
be just around the corner. Don’t miss
out!
Just a short trip from Las Vegas or St
George, Utah. Come the night before ,
or stay over the night of. Make a week-
end get- a-way out of it.
Destination: La Jolla, California
Though our trip to La Jolla was
more of an urgent nature, a serious
medical visit to Scripps Clinic, we have
made the trip many times under more
festive circumstances.
To touch on Scripps, this is a great
facility for those in need of top notch
medical care. We can’t say enough
about the Doctors, staff and level of
care received there on several visits.
We are normally drawn to La Jolla
for it’s shoreline parks, seals, birds, and
the shops.
On this trip we stayed at the Marriot
Residence Inn. More like a small
apartments, that became home away
from home for the few days we ran
around Scripps

Continued from Page 1 LA JOLLA
La Jolla is a favorite vacation destination
year round. Having one of California’s most
beautiful and picturesque coastlines.
There are endless subjects for adventure.
World-Class golf courses, kayaking sea caves,
museums, Birch Aquarium, walking along the
shoreline, farmers markets, wine tasting tours
and shopping. The streets of downtown La
Jolla thrive with shops. From high-end art
galleries to quaint boutiques.
One of our favorite times to visit is the
Christmas season. Though you won’t find
snow to get in the holiday spirit, the lights and
decorations are sure to pique your senses.

My friend Gator and I quickly planned a
last minute get away in late August. We drove
the 3 1/2 hour trip from Las Vegas in blister-
ing desert heat of 110 degrees. Soon after
passing through Cedar City, Utah we were
able to roll down the windows and embrace
the cooler mountain air.
We arrived at the campground and found
our spot. Except for a noisy crew next to us
the spot was good. Plenty of firewood to be
found. The Bark Beetles taking their toll on
the trees all around us, provided an ample
supply of dead wood.
We broke out the Dutch Oven and warmed
up a big pot of stew thanks to Gator. As dark-
ness settling in we stoked up the campfire.
The evening air bringing quite a chill.
We had hit the full moon. It soon came up
over the mountain top to the east of us.
Slowly climbing from behind the black silhou-
ettes of the pines thrusting up from the ridge
above us. The western sky black by now, filled
with countless twinkling points of starlight.
The next morning we launched the canoe
and rigged our fishing tackle for some trout
fishing. We landed several nice ones and
caught a few junk fish that were also hitting
our bait. The action kept use interested for
some time. Ahhh the life. Too bad we had to
head back to the City and the heat!!

Sour Cream and Cream Cheese Pear Cake with Raspberries
10 in Dutch oven
1 white Cake mix
1 ¼ Cups Pear Juice from canned pears
1/3 Cup Butter melted
2 whole eggs
Combine the above and pour into a 10 inch lined and sprayed Dutch Oven.
8 oz Cream Cheese softened
1/4 Cup Sour Cream
¼ Cup Powdered Sugar
¼ Sugar
2 Table spoon Vanilla
Mix till smooth and set aside
1 medium can of sliced pears
1 4oz cup of Raspberries
For the Bottom ring we suggest using a 1/2 ring or a
ring around the bottom inside perimeter with every
other briquette missing. (Some charts suggest a full
bottom ring). We feel a full might burn your food and
suggest trying both and adjusting to your preference.
The first top or the single bottom rings are placed just
inside the outer perimeter of the DO. Additional rings
are addded concentrically toward the cener.
Fractional rings are spread evenly to maintain
uniform heat.
A ring is defined by laying charcoal on its flat side with
edges touching each other, creating a complete circle.
1/2 Ring is a complete circle with every other
briquette missing.
Place the sliced pears in the cake mix in a star shaped pattern, then fill in the
spaces with the sour cream and cream cheese mixture. Place the Raspberries
around in the cake mixture. Bake the cake for 30-45 minutes. Let set and
cool, then dump out onto a Dutch oven lid. Garnish with powdered sugar
and fresh berries and pear slices. Note the cream cheese filling is soft and
gooey till the cake is chilled. I prefer it to be served a little warm or at room
temp.

It is better to place more coals or briquettes on the lid of
the Dutch oven. Many Dutch oven cooks follow a simple
three up, three down rule . Measure the diameter of your
Dutch oven and add 3 to estimate how many briquettes to
place on the lid. Take 3 away from the diameter measure-
ment and this is the number you need to place under the
Dutch oven.
If you have a 12 inch Dutch oven. 12 + 3 = 15. Place 15
briquettes on the lid of your oven.
